| Since grits are ground hominy, I wonder if a good sprinkling of dried grits would have the same effect as the cornmeal?
Any experience with this? I think my sons Science Fair Project might just involve grits and cornmeal.... |

| As I recall, my mother made hominy by boiling corn in a lye solution. So I suppose that would alter at least some of the chemistry and, for sure, any fungal content of the corn. In my mind, that would create serious doubt as to whether corn and hominy would give the same results. |
