Celery bush gone to flower - any uses?

I guess you could call this an experiment.
I allowed my two celery plants to go to seed/flower. I dont have any plans to ever grow celery again, and I dont really want a million celery seeds in the garden. So I am thinking of cutting it down, but before I do that I want to check with people that there isn't something worth while i can do with the plant.

I.e. can I eat the root like celeriac? Will it shoot nice new stems if I cut it back?

I let mine do that so I could use the seeds for cooking. They're an expensive spice to buy.

great idea! I've never used ground celery seed before but it might be time to start.

I think the ones I buy are usually whole seeds. Grinding them would probably impart more flavor, though. Wish I had a mortar and pestle.
