How to have a Fruit tree pruned to a bush form?

My name is johnathan jones and I want to know to prune a fruit tree into a small (4 to 7 feet tall/Wide) bush form because I have two fuyu persimmons and a star fruit tree in containers and I want to keep them fairly small/control their size. Also I bought a earthbox and I want to grow one of the trees in them. One more question: Have anyone ever grown a fruit tree in an earthbox if so tell me how it grew so I may try it. (Because I really really want to try it. because my fuyu has quite a bit of fruit on it my starfruit is young it never fruited yet... Thank you very much and have a blessed day!
