where did (south) Louisiana's celery come from historically?

Celery doesn't grow well in the heat, I'm told. To grow celery in Texas, one would have to grow celery in the fall or winter and give it lots of water.

Louisiana cooks, and South Louisiana cooks, historically used local foods in their recipes. So where did the celery in the combination of onion and green pepper and celery come from? Was it shipped in?

It's shipped in during the hot months on ice. I have grown it as a winter annual, although it's a biannual.
