I had a good early start on my pole beans along a trellis; beans were about 2' tall. A big wind blew it over and a number of the vines got broken anywhere from near the ground to near the top. My question is, will they "branch out" and send up a new stem from the broken point, or is the broken vine like pinching off the top so it won't grow taller? I.E., replant or salvage?

I think you'll find that most of them will grow more shoots.

If the vines broke off below the first node (where the seed halves were attached to the stem), they won't grow back. Any vines broken above that first node should send out new shoots.
