Saving southern/cow peas for seed?

No one has the old Hercules pea seed anymore. While I was digging around in my barn I found, what I think, may be some that I had saved (still in the pod)for replanting.

I shelled them, planted them and I have about 30 plants. If they are Hercules I want to try and save the most that I can for replanting next year.

Would it be best to just let them grow and harvest for seed? Or pick some, leave some to dry? I would love to eat every one because they are so good! :)
