You want to eat them cooked right? If this is the case, then you should be able to let them dry on the plant. Once the pods have dried you can shell out the beans and spread them on trays, for a couple of days until they are all completely dry. You'll know they're fully dry when you can't dent them with a finger nail. Then, I'd recommend that you seal them in jars or air tight bags and freeze them just for two days, to kill any weevil eggs which might be hiding under the seeds' skin. When you take them out of the freezer, let them warm fully to room temperature before you open the containers. This is to prevent condensation from forming on them, which can damage them. After this, you should be able to store them like normal store bought kidney beans.

If you are going to cook them like other dry beans, I'd recommend that you boil them, on low, until when you spoon out a few beans and blow on them, their skin splits. Depending on the age of the beans, they are generally done between one and two hours.
