Do you top them?

I have looked through a lot of pictures on this forum and some of the bean trellis pictures look wonderful and orderly. I have a good trellis system but no matter how tall I make it, they keep climbing until they are heavy enough to fall over leaving a big mass at the top. I have wondered if you weave them back down through the trellis or if you snip off at the top of the tellis. I have done neither.

I grow both pole beans and yard longs, and have one arched trellis that doesn't require doing anything to, but I have an 7.5 foot trellis that now has plants two feet over the top, and a 4.5 foot one that will soon have the same problem. If I cut the growing tip will they just branch out, or will I damage the plant?
