In general the white varieties have a clear broth. Darker the color the darker the broth especially with peas. Of the ones that I grow only Lady and White Acre have clear broth.

Thanks Farmerdill. I knew that the white and lighter shades produce clearer broth. But She kinda wants a list to pick from to order seeds. If I just do a google search for white beans and/or seed lists I can't get what she wants.

She tried the White Dixie butter peas this year and loved the taste. But she didn't like the fact that they are hard to pick. She wants something that you don't have to search the bush for.

Most of the small baby limas are hard to pick and shell. Options are the larger Wood's Prolific, Henderson's Baby Lima, and Fordhook Baby Lima. These are all bush. Carolina or Willowleaf for a pole white baby lima.
There are a number of white common beans, Great Northern being one that does not cook up into a broth. Assuming you are looking for a dried bean, just look at the grocery store for common varieties or vendors like Purcell Mountains farms for more exotic types.

White Whipporwill would be a cowpea that fits your request. For an easy to pick pea, Top Pick is arguably the easiest to find.

Agree, but unfortunately typical of many vendors. Not only is the photo of an English pea (Pisum sativum) but the description is quite misleading. The only Top Pick that I know is a Pinkeye Purple Hull. No southern pea is hard to pick altho the vining types can be be a bit more difficult. This one was designed for machine harvest so it sets pods high as do most of the newer bush varieties. Quick Pick is similar. Green shelling becomes the problem for tiny peas like Lady.

Zipper Cream peas (crowders) have a clear (or very light, anyway) broth. They are our favorite!
