Trying to seed save: What to do about freezes?

I wasnt sure how much time my bean varieties needed to go from flowering to the stage where you can harvest them to save them from seed. Combine that with how they didnt set any seed during the summer hot snap and many of my seeds I'm trying to save arent at that perfect "dry and rattling on the vine" stage yet. But we got our first 32 degree frost over the weekend, and by the looks of it more are coming.

Should I harvest now or let them stay on the vine outside longer? If I harvest, just pull the pods or if I pull the whole thing and hang it in the garage will they continue to "ripen" and make better, more fertile seed?

The pods are large and lumpy (and have been for weeks it seems!), some are partially dried but not totally dried.
