about to freeze, whats the smallest beans i should pick?

Nighttime temps are getting in the 30s and I picked today anything over 4 or 5 inches. I have blue lake and Kentucky lake (?), whatever the cross is and French filet. There are still several hundred beans but about half are babies and the other half are 2 to 4 inches and pretty thin. I expect the plants will get killed by a freeze in the next week. What are the smallest beans I should try to salvage? Also, why do some beans fattened up before ever reaching the recommended picking length?
