What's the story with the 'fast growing shoots' on my JMs?

I've now heard from two friends that say the "shoots" that tend to take off and grow really fast at the extremeties of my Japanese Maples are actually the rootstock variety (unwanted) making it's way up the body of the tree and trying to grow. I can kinda buy this, as in some cases, the leaves that are growing look much different than the ones on the rest of the tree.

How do I handle these, and how do I, when they look similar, distinguish these from normal growth?

I've posted some pics in the gallery that show ~6 trees w/ the shoots.
