Post Harvest Produce Handling

Hoping some of you can answer some of my questions. I did some market gardening last year and will be doing a lot more this year. Because of the increase in size goal, I need some help with easier ways of doing things.

~ How is the cleaning of roots, greens, and other veggies handled?

~ Are there better times of day/weather to harvest some veggies?

~ What about keeping certian veggies cool? Which are the most sensitive and what are some methods? (a cooler is out of reach for me at this time)

~ At market, how are veggies displayed? (I sold lovely heirlooms last year but so many people touched them through the day it ruined some of them so I'd like to avoid this somehow)
