I just sell the growing tips of the basil, which is mostly leaves. I always figured that if you have a lot of stalks it is obvious that you're just trying to add bulk or weight. I sell to a restaurant and a store. At the restaurant I get $12/lb and I bring it in one or two bushel baskets. At the store I sell by the package.

I sell both ways...

If I sell with the stalks I bundle them and place in water. I sell these for $2.00 a bundle ($10.oo lbs)
I also sell mostly leaves in small sandwich bags for $1.oo
($12.00 lbs)

Be careful if you place basil in sealed (or folded) plastic bags that it doesn't heat or it will turn black. I prefer the banded bunches in a base of water and when customers ask how to store I tell them to put it on their countertop in water the same way.

One advantage to me with bunches is the time. I usually average 10=15 seconds to cut and band a bunch. Tips take much longer to pick. Mbrown297 should have mentioned that a rounded bushel of tips only weighs ~5 lbs. I know it takes an entire morning to snap 100 lb.

I use the sandwich bags with the fold over tops so there is some air flow. As long as the bags are not in direct sunlight I don't have a problem. I don't keep them in a cooler either. Some markets I have a problem with the bunches in water staying fresh if there is a lot of wind or heat. I do both ways and that way it pleases all customers.

I have been asked by a friend for 8 "bunches" of basil.
This is for his annual Fettuchine festival, ie: pasta party.
He said he typically buys 8 bunches from a local farm stand. But, because I grow organically, he would prefer mine. Sooo, what is considered to be a bunch? I cut some last night to hang to dry, this bunch was about 10 stalks.
Is this a typical count?
