I make up small bunches, just enough for one recipe (usually about three stems) of each herb I take. I always found with the bunches one gets in the grocery store, that they are too much for one 'serving', and alot of it ends up going to waste. Alot of my customers are trying new herbs too, so smaller bundles work best. I charge a buck for each bundle and don't package them per say, but put a small rubber band around the stems to hold the bundle together.

I noticed that some of the others growers at the market are matching my price per bundle.

I display the herb bundles in pretty little glass canning jars I found at a yard sale. People like the look, and it keeps them fresh looking (we can put ice in the water, and spray with a mister in the heat too)

It's funny, but I've discovered the 'serious' shoppers come first thing. Even starting their purchases before the market officially opens. These are the people who buy out my mushrooms, mushroom grow kits, and the other goodies offered by nearby vendors. Later in the day is when I sell more of my herb bundles, chipped wood for grilling, and bouquets.
