Length of Storage

I am curious if anyone has a quick reference or judge for average length of Storage for veggies.

I am only hitting one market every 2 weeks this year.
I have abut 5000sqft of garden space.
The problem I am having this early in the season (had a late freeze here) is my harvests are prime the week after market, meaning they would have to store for 7-12 days before I hit market days again.

Obviously some things keep that long and other don't. I'm just trying to maximize what is saleable and minimize throwaway/giveaways.

Not sure if this is what your looking for but it might be a place to start. It gives the optimum storage temps and conditions along with the max storage life.

Keep in mind, however, that most customers expect to be able to store their produce for at least a week. So subtract one week from the numbers in the chart.
