Parsnips in Zone 10

Help!

I moved home to help my parents on their farm after living and gardening in Maine for five years. My parents live in Zone 10 on the coast of Georgia. While I like being able to farm year around I miss the snow, I miss the number of farmers in Maine (we are the only farm in a 60 mile radius selling local produce) and I miss parsnips.

Has anyone ever had success growing parsnips in this type of climate?

First I thought I'd plant them in the fall for spring harvest, average temps now are in the upper 80s during the day and low 70s at night. First frost date )plus or minus six weeks) is Nov. 20th.

Then I thought maybe I should plant them in the spring and hold them until cold sets in during the fall and winter. I can usually count on two hands the number of freezing nights we have each year.

Now I just don't know what to do but I'd give a lot to pull a nice, sweet parsnip from the ground.
