Pricing heirloom tomatoes

Any advice on how to price heirloom tomatoes for restaurants? Thanks.

It really depends on your market area but...with that said you can get from $2 to $3 a pound and as high as $5 a pound. We grow heirlooms only and they have a very short shelf life. We were selling heirloom tomatoes here in southern Ohio for $3 a pound early in the year and are now at $2 a pound. We sold 150 pounds worth yesterday at the farmers market, all were boxed seperately and boxes were labeled. At $2 a pound we were the highest priced and we sold the most. A friend of mine in Kentucky is getting $3 a pound right now for heirlooms. He has been doing this for many years and has a dedicated following.
