Very brittle boy Choy

Dont know why but it's so brittle when u cut it,you can't pick it up. It grew so fast, like four weeks from transplant to harvest. Would that be the reason?

It tastes good and really crispy, but so far I have been cutting it, letting it wilt slightly in the field, then putting it in a box and then cooling it in the refrigerator, but then when the customers go to pick it up it falls apart some more. Should I sleeve it in a bag while its slightly wilted?

Is it Joi Choy, White stalked? Most Bok Choy is very brittle. Just pick it and let it wilt then bag it that is what I do.

yes, it's the joi choy variety. I've grown it before but it wasn't brittle like this. I can't keep it together even carrying it from the field by hand. I had to put it in the wheelbarrow last night one at a time and couldn't hardly get it back out without tearing it up. This is new for me. it wasn't like this last year...I'll do like you said and wilt it just a little and bag it up and then crisp it back up in the refrig.
