Very brittle boy Choy

Dont know why but it's so brittle when u cut it,you can't pick it up. It grew so fast, like four weeks from transplant to harvest. Would that be the reason?

It tastes good and really crispy, but so far I have been cutting it, letting it wilt slightly in the field, then putting it in a box and then cooling it in the refrigerator, but then when the customers go to pick it up it falls apart some more. Should I sleeve it in a bag while its slightly wilted?
