Micro Green mix help

Lately, I've been getting demand for micro greens in my area, both from end consumers and restaurants. I can obviously buy micro green seeds online, but has anyone noticed that the seeds cost more than the sum of its parts? Why so expensive?

So this leads me to wonder, can I make my own? Or should I? Are mixed micro greens in more demand than single micro greens? My main problem with formulating my own "mix" is that the seeds of each species germinate and grow at different rates. So how do I choose what plants to use?

Any insights?
