In my former market, we could only sell 'cultured' mushrooms according to our contract. But other vendors sold the common 'morels' and nobody said anything. Most of the time, they come on just before our market time start.

I found tons of Oyster mushrooms and some hen of the woods this fall. I gave some fresh to the CSAs and dried the rest for winter markets. I am not worried and there don't seem to be rules about it. I would bet everything I have that they are edible. However, I am going to put up a sign that even edible mushrooms can give the rare person problems and they must always be cooked not raw. Every mushroom book says even edible mushrooms will cause a few people mild illness.
I am still trying to find some other mushrooms to add to my mix.

I used to grow oysters on apple logs and got $12 a pound for the mushrooms. They were always a great seller. We haven't been able to get any going since we moved to a new farm. Actually we did find some oysters growing wild but the dogs also found them and used the log as a bathroom log so could not use those for anything but compost. Once we removed the dirty shrooms and caged the logs, the logs quit producing.

We did start some mushroom logs last year and even got mycellium growing but they seem to have died over the summer.

seems to me if mushrooms were profitable then there would be a lot of people selling them. there is one vendor at our market who has them.
we looked into growing shitake mushrooms but everything we read indicated that its hard to get them to produce reliably in the US and the people making money from them got a government grant to defray initial costs.

We are getting one of our trees cut back next spring and plan on using some of the logs to start some oyster mushrooms to sell at market.
