What to sell at winter markets?

Well we've sold every paperwhite and forcing bulb...our wreaths, swags, garlands and kissing balls are hanging all over town and our market is closed for the next two weeks. We are toying with the idea of continuing through the winter but aren't sure what we can sell. We still have amaralis, both potted and unpotted and may venture to take some houseplants, carefully wrapped from the elements....oh yea and we're gonna sell some organic sprouting seeds and sprouters....We normally sell perennial plants, bulbs and shrubs....any other ideas??

How about indoor salad greens... either sprouted and growing in a small tray, or a kit with the seeds, soil etc all packed in the tray. Clear clamshells like bakeries use could work.
