Check with your county. We do markets in 2 different counties, and what is allowed in one, is not in the other.

Are you allowed to sample at your market? Can you cut off a piece of something, and give it to someone to try? If so, you can most likely cut a head of cauliflower in half, and sell it. If not, then I would say no - it is not legal. Unless you can cut and bag it in a certified kitchen.

In my market the Cheddar/orange heads actually do sell. I haven't, but others have sold them. The purple heads people think that the heads weren't blanched correctly, but they do buy them also. You might have to 'give' some to get the sales started. Possibly some smaller ones.

I see you on the Growing Growers Listserv sometimes from K-State? I'll bet if you check with them, they know what's the rule in Kansas. I don't think there are any restrictions but the people at the Listserv will have the "official" Kansas answer.

Maybe you could space them closer together so they wouldn't grow as big and cut them earlier? I know the state board of health won't let you cut anything here. big no no!unless you have an approved food kitchen.
