It's bok choy (or choi) AKA pac choy (I correct you because you will never find bok chow seeds). Nice green grows pretty much like tat soi or mizuna. nice late spring/summer/fall crop.
it does not take frost well-the greens do alright to about 29F with a thin row cover but freezing will cause it to bolt quickly (even in fall as I found out this year)
bok choi is a great crop to grow in an unheated hoophouse. i haven't had the bolting issue that boulder has had. i have a few of them in my hoophouse now and they have survived the past few days of low teens temperatures very well.
I am with Randy, it is doing great in my hoop house. We have had temps down to 12 to 16 and it is doing just fine. It has row cover over it.

I have 40-50 Joi Choy and Red Choy left. We are eating and selling them as fast as possible. I am guessing they will go bad or freeze before we get to them all.
I don't like the leaves, but I really enjoy the stalks. We use it in any recipe that calls for celery too. The kids have even put peanut butter on it for "Ants on a Log"!
Here is another picture of Napa Cabbage and Red Choy that I picked on December 11th. It was 16 degrees outside with winds 30-45 plus. I had to put everything in tubs with lids to get it to the house.
My youngest was really interested in the Napa Cabbage.
