I got rid of mine - just too invasive for the spot I had for them. I'll bet the chokes are already formed. Did you dig one to see? I ask, because I remember when I dug mine out one summer there were huge chokes while I was getting rid of them.

So far I have just removed the stalks that were broken and the foliage died.
I don't know if any chokes have formed. I pulled one big stalk out of the ground and there were only root hairs, but no tuber yet.
I suppose I could chop them all down and see what happens. As you said, they are invasive and there's sure to be some harvest. Maybe even from last year! but the roots tend to rot if too old.
Since they are all in full bloom, they are not too pretty laying on the ground. and the grass is growing up underneath. Probably will chop them down.
