Help - Lilacs, peonies and ??

We just bought a newly constructed house and are trying to establish beds. We are brand new gardeners and are so excited to get our hands dirty. : )

Facts:

This spring we planted white lilacs (persian) around the front of the house. They are planted pretty far apart and away from the house's foundation to give them enough room to fill in and grow with (hopefully) few mildew issues. They seem pretty happy and have shot up to 3-4 feet so far. They are growing mostly up and only a very little bit out.

We are planning to plant peonies in front of the lilacs in a few weeks as well as scatter a few bulbs (tulips, hyacinths and daffodils) throughout.

The area is sunny throughout the day. We have deer and rabbits.

Questions:

1. There are about two feet behind the lilacs to the house's foundation. Should we plant anything here or will the lilacs fill in? We don't want the newly amended soil (anyone want lots and lots of rocks??) to grow weeds...

2. Will trimming the lilac tops in the spring encourage them to bush out? What else should we do?

3. After the spring bulbs have finished, any suggestions on what to plant that will go well with peonies and lilacs (if there is any room, maybe something low like a groundcover) that deer and rabbits would not (we hope) eat?

Any suggestions would be appreciated (pls. keep in mind we would like something that deer and rabbits normally wouldn't like). Thank you!!
