potted lavender

Hello, I'm new to the forum and I'm going stir crazy with what feels like the longest winter I've endured.

My question is regarding lavender. My fiance and I are planning to use terra cotta planted lavender plants as table centerpieces for our wedding in August. I've potted roughly 30 (50/50 provence & munstead) plants in 6" pots, and roughly 20-25 plants are filling out very nicely, but I'm having difficulties keeping them all growing strong. I'm currently keeping them under lights in the basement with the intent of moving them outdoors at the end of May.

The 5-10 plants I'm having troubles with seem to turn on a dime, look great one day, then wilt very quickly the next. I'm watering roughly once a week, allowing the potting soil to dry almost completely between waterings.

What am I doing wrong?!? are the provence lavender plants more fussy than the munstead? is there a better variety for planting in such pots?

Thank you!
