Hubbards anyone?

I had a terrible time this summer in getting my vine crops to put out female blossoms. The Rouge Vif pumpkins did the best - Moon and Stars watermelon second - my poor Hubbards did not set a blossom until late July.

They grew very quickly and are enormous now, but I don't think they are ripe. My understanding is that a Hubbard will start out light green and turn dark green as it ripens.

Does anyone know if a Hubbard will continue to ripen after it is brought in? I was intending to store it in a cold corner of my basement. I hope not to write this year off as a failure - squash-wise. My understanding is that Hubbards can take quite a bit of cold, so I haven't moved them as yet. Would I be foolish to leave them out until the first hard frost?
