Fall planting of vegetables

I must confess that I have been somewhat sloppy in some past years when cleaning up my vegetable garden in the fall. The next spring I was surprised to have onions, lettuce, spinach, and even potatoes sprouting up the next spring. I have often thought that I should "intentionally" plant in the fall to get a head start in the spring. Does anyone do this? If so, does it have something to do with the seed variety, timing of the planting, winter cover, or overall winter temperatures? I have started garlic in the fall with good results. Thanks for any and all information.
