Anyone have luck with edible bamboos in MN?

Just looking through the plant catalogs, and I was wondering if there are any bamboo plants capable of both producing edible shoots and surviving -20F winters? We're south of the Twin Cities (near Hastings), and it looks like we're getting close to being zone 5a now based on the updated hardiness maps. It looks like "Nuda" might be my best bet. Anyone tried this one, or have another variety to recommend?

I'm fine with winter dieback so long as they resprout from the roots. In fact, I'd probably just cut them back every fall anyway to put straw on top of them for insulation.

thanks!
