species variations

I'm getting ready to get some native plants this spring and I'm wondering about how exact you have to be in particular species/ varieties. I have planted an Oregon Oak in my yard, a quercus garryana, which is native to the area. But if I had planted a California White Oak (quercus lobata) instead, would that still fill the same niche?

Some exact native plants have plain leaves but cross breeds or similar varieties have variegated leaves. If you get the variegated leaf variety, would the local bird and bug population still enjoy it?
