Carrots. Help.

Ok, we eat a TON of carrots and have a mostly successful garden...except for carrots. I don't know what it is we are doing wrong, but we just seem to get underwhelming crops every year. I've moved the planting location around in my garden, gone from lasagna beds to soil beds, container beds, and raised beds.

Any comments or suggestions appreciated. This is a crop we want to drown in so we can put them up in cans, store in our basement, and freeze. We live in sand and I build my own soil out of whatever I can scrounge up. My lasagna beds are made from seaweed and leaves. I amend my beds with compost from our bin. I use general purpose fertilizer and try to keep organic. I do control slugs with sluggo.
