If my plants look OK, is drought killing them?

So far my new perennials including ones from the spring swap and ones from seed look green and unstressed. No noticeable wilting. I have watered just a few times, and when I do water I water very deeply. If the plants seem to be doing fine, does that mean they are healthy and the drought isn't going to affect their ability to overwinter? Or, can a plant look great but be shocked enough by the dryness to die in the winter?
