Wanting evergreen and fast-growing makes me think of the obvious -- have you considered any of the Thuja? They come in dwarfs and in various shapes (pyramidal, round bushy, etc), and there are varieties which have gold highlights or are bluish, etc. which allows you to have more interest than plain green. I have a dwarf (3') round -- it really is like a big ball -- that is part of the house-scaping, heavy clay and gravel soil. It has never required pruning, and has survived 2' blizzards, hurricanes, and spring floods, as well as a 3 year drought. They seem to be pretty much trouble-free.

I suspect you would be happier with that hedge if you planned on an evergreen "fence-line" and then put an assortment of flowering shrubs, bushes and perennials in front (your side) of the evergreens. The eye likes variety in both color and shapes. Also, don't forget to swoop-curve the bed edges a bit for a flowing shape which helps distract the eye from the all-in-a-straight-row hedge plants. Of course, I also think a birdbath should be worked into one of those curves. Maybe check with the Audobon site for Utah-specific recommendations for small trees/shrubs that will attract birds ... nothing like a bit of color flying around to keep everyone's attention on the bird instead of the boat :)
