basics for growing figs

I've had a Desert King fig tree about three years. It is about 12 feet tall this spring with new leaves coming out at the top of the three branches that start at about the eight foot level. I know it's too tall, and am wondering if I should cut it off (if so, at what time of year?) about three feet up (or less?) from soil level. It has never had fruit and is in a pot. I don't fertilize it but water regularly.
