Those south-facing windows sound ideal; you can probably raise almost any plant that appeals to you.

Self watering pots are handy; I prefer the type that has a concealed reservior connected to a filling tube that has a floating indicator-- very easy to judge when more water needs to be added.

Some time ago there was a discussion (I think on the Experiments forum) about using diapers as a pot liner; I've tried it and found the diaper to be very successful but with 2 caveats: it must be kept covered with soil [an exposed edge seems to wick moisture away to evaporate rather than releasing moisture into the soil], and don't use a diaper on succulents such as aloe or christmas cactus [too much moisture is provided].
