Need Help With Broccoli

I planted 9 broccoli plants (Early Dividend) on April 5. I lost one to some kind of critter and the other 8 seemed to be OK, but in the last few days I have noticed that one seems to have a 2" head already. The problem is it's very loose and looks like it's about ready to rice on me. Should I cut it off to force the side shoots to form? I have heard that once a plant rices, it's no good for food. Any help would be most welcome.

Patit is up to you. I would let it head out and then cut it off before it gets the point of flowering , ie tight heads. Try one of the nine and see if you like the results? After a while you will find a point that makes you happy, with the results.
