seeking info on grafting what onto what

I just spoke to an expert regarding grafting ,he didn't really have time to tell me a lot ,just that you go by the latin name to identify the familly ,but not all plant from the same familly can be grafted to one another,but he was at work and I didn't ask how you know which ones were compatible..I need a book telling me more on this subject .
He also advised me that in Calgary our chinooks (warm winter winds)prevent grafting from being very sucsessful.The graft when frozen will die most of the time ..So I wonder what about all the trees being sold here that are grafted to other root stock ?? I'm mostly retired now and would like to try this grafting out as a hobby ..Where locally can I get grafting supplies ??
