Tomatoes in zone 5 - to pinch or not to pinch?

I am going to pinch out the growing tips on my tomatoes later, but for now, I am wondering if I shouldn't already pinch the secondary stem tips. Better Boy and Sweet 100s are full of blooms at various stages of maturity, still forming tomatoes. However, they already provide us with more than enough tomatoes. But the plants are unruly monsters (Sweet 100s main stem 12 feet), so cleaning them up would help me get to the fruit and such a clean-up would imply cutting off the outer layer of stem tips.

Given that summer is coming to an end soon in my zone and considering that the plants are full of ripening fruit, shouldn't I prune off the ends of the secondary vines, or at least some of them, thereby cleaning them up and making gardening easier?
