Spy apples are my first choice for pies. But I also like pies made from Ida Red apples. I have tried other apples with success, but cannot remember the varieties right now.

Interesting...I live in Manitoba and don't ever remember seeing 'Spy' apples in stores here.

What do they taste like? What kinds of other apples are they similar to?

They are medium to large. They look somewhat like a dull Mac Intosh.Some are very red , some are again more like a Mac with red and greenish.
And that is the reason I was asking about the variety. There are different varieties . Northern Spy , Nova Spy Prairie spy and others.My wife made a pie about a month ago. . The apple was more red. It was great. She made one for TGiving and it was not as good. the apple was more greenish. The market I bought them at said they were from Manitoba. It is possible that the first were freshly picked while the second ones were picked while still green and were stored for a few weeks to avoid the frost. They are crispy with , pleasantly tart flavor. However I would not rank them very high as an eating apple. Good for pies. Johnny

Interesting..it could be the Manitoba Spy, allot of our prairie apples are good cooking apples, my best is the Collet, also good for eating, stay's
good till Christmas.
