Italian Prune rooted, now what?

Hello! Hope everyone is having fantastic weather.

I got some Italian Prune branches/off grow from my in-law's farm last fall. I stuck them in pots and just left them outside thru the winter. To my delight them have rooted and seems to be doing ok.

My question is - now what? (I have to figure out how to attach pictures to posting..) One pot has multiple branches, and there's new ones coming out from the soil, whereas the other one is a single branch. Both has buds swelling along it, and both are quite tall and skinny (about 4 feet). Should I cut it shorter? Should I cut the out the mulch-branch one to turn it into a single trunk? I would like them to grow into single trunk tree if possible. Any advices will be greatly appreciated.
