Weirdest spinach ever

OK, I've had spinach bolt - always - but this isn't what I expect to see:

That stalk is so thick, and there's only one! When I've grown spinach in the past, it's been multi-stalked. Also, the arrow shaped leaves suggest to me that it has bolted, but it tastes fine. Plus we've had about 3 sunny days and none of them notably warm. Is this just some variety I'm unfamiliar with? (I didn't take note when I bought it) Or am I eating not-spinach? It's true that I haven't grown all that much spinach - I'm probably just ignorant.
