Convincing a flowering quince to fruit?

We have what I considered to be a huge, overgrown ornamental quince. We'd get a few tiny quince that fell off, but that was it. Then one year we suddenly had a crop of a dozen or so full-sized fruit. I don't remember the exact number, but it made a lovely batch of membillo. And that was it. Never again. I even went out and made like a bee once - no luck. Quinces are supposed to be self-pollinating, so I don't think it needs a friend. Any ideas on how I might encourage an encore performance?
