Sunchokes / Jerusalem Artichokes

I am attempting to grow Sunchokes this year, but I don't know whether or not to water their bed now that the tubers have been sown. Also, I'm worried about whether squirrels will dig up my seed-tubers. Should I try to do something to block their access?

Don't they grow wild around here? I am just guessing, but at this time of year we usually get an overabundance of rainfall, and since it is a native species I would think that it wouldn't require extra.
Squirrels -I have no idea! Do they dig up other tubers?
