How do I store jerusalem artichokes?

A friend gave me four little tubers, each about the size of a golf ball. I planted them back in march of this year, and got four giant sunchoke plants.

I'm digging up the plants now and I have several paper grocery sacks full of roots.

I want to save a few roots to replant in the spring next year. I want to save most of the roots so I can eat them over the winter.

What do I need to do?
