Pruning a formal shrub back to its natural form?

Hi everyone! I'm just curious if anyone has had some success in restoring a formally shaped holly back to a more natural form? At this new house we moved into a few months ago, there are three mature yaupon holly trees. Two of them have been sheared into formal mushroom-shaped canopies for years, so they're basically a round dome shell of leaves with a lot of dead limbs on the inside.

Personally I prefer trees to look more natural, so I'm curious about what the best strategy might be to prune these? Is there any way to do it gracefully so that they don't look like they've been mauled by a chainsaw of am I going to have to do some pretty severe pruning?
