Winter squash question

Last summer was my first attempt to grow pumpkin and winter squash. I am not sure I want to grow this kind again because it gets too large, but I wanted to butcher one so I could send seeds to those who may want to try them. The first two I butchered mostly green on the outside and orange inside. They were solid except for the seed cavity.
The one I butchered today was not harvested until it had quite a bit of orange on the outside, it turned out pithy in the center.

Question, (1) what did I do wrong?
(2) will the seeds be good from it?

My wife butchered one while I was gone this morning and she said it was not pithy like the one I butchered. Mine weighted 20.5 lbs, hers was smaller and did not have much orange on the outside.

The name of the squash is Menina Rajada Seca. They were harvested in Aug.
