harvesting sweet potatoes

I harvested my first crop of sweet potatoes! Everything I've read online says I now must "cure" them by first putting them in a dark 80-90 degree humid space for 10 days or so, then storing them at about 55 degrees for at least a month for them to sweeten. Being a home gardener, I'm just not set up for this, especially the first step. Currently, they are in a box in a warm bedroom (south side of house), and later they can go in the garage (if our temps drop), but will this do? And how long do I need to wait to EAT them?
