What they generally serve on the street is either a regular dent or a flour corn, in the milk stage. Either way, if left past the milk stage, these corns would be good for grinding too.

We grow Mesquakie Indian and Cherokee Squaw, both available through Sandhill Preservation Center. They're both usable for this kind of dish, and they're both well adapted to our growing conditions.
