advice needed for permaculture garden

Hello

I am trying to establish a very low-maintenance garden for a non-profit here in the Ozarks. We are short of laborers, so in the summer the garden gets attention about once a week at most. So, I want to plant more perennials.

I've started one rhubarb, a couple of blackberries, strawberries, and Egyptian walking onions. Much of the garden borders a south-facing brick wall, full sun. There are raised beds with very fertile soil (lots of organic matter).

So, what are some ideas for low-maintenance fruits/veggies, preferably perennials?
